Ingredients:
- 3 eggs, separated
- 3 oz fine sugar
- 3 oz flour sifted with ¼ teaspoon baking powder
- 2 Tablespoons boiling water
- Pinch of salt
- ¼-1/2 teaspoon vanilla
Method:
- Prepare oven, grease sandwich tins and line bottom with greased paper.
- Whisk egg whites till fluffy.
- Add egg yolks one at a time, and beat for a few minutes.
- Add sugar and beat till thick and creamy for about 10 minutes.
- Add boiling water and beat for another 5 minutes.
- Add vanilla.
- Add flour which has been sifted with baking powder and salt, folding it gradually into the egg mixture, using a spoon or the whisk.
- Pour mixture into tins and bake in a quick oven for 10 minutes till set and golden brown in colour.
- Turn the cake quickly on to sugared paper. Remove greased paper from cake, spread with hot jam and place one cake on the other to form a sandwich. Sprinkle icing sugar on top.
